Spicy Southern Slaw

A colorful, crunchy side with a tangy kick and a homemade spicy Greek yogurt dressing.

SLAW INGREDIENTS

• ½ head red cabbage, finely shredded

• ½ red onion, thinly sliced

• 1 big handful shredded carrots

HOMEMADE SPICY DRESSING

• ½ cup plain Greek yogurt

• 2 tablespoons extra-virgin olive oil

• 2 tablespoons apple cider vinegar

• 1 tablespoon Dijon mustard

• 1–2 tablespoons cayenne hot sauce, to taste

• 1–2 teaspoons honey or maple syrup, to taste

• ½ teaspoon smoked paprika

• ¼ teaspoon cayenne pepper (adjust to your heat preference)

• ½ teaspoon garlic powder

• ½ teaspoon onion powder

• ¼ teaspoon black pepper

• ¼–½ teaspoon salt, to taste

• Optional: a squeeze of fresh lemon juice

• 1–2 tablespoons water, only if needed to thin

INSTRUCTIONS

1. Shred the cabbage, thinly slice the red onion, and add to a large bowl with the shredded carrots.

2. For the homemade dressing, whisk together the Greek yogurt, olive oil, vinegar, Dijon, hot sauce, honey or maple syrup, and all the seasonings until smooth. Taste and adjust the heat, sweetness, and salt. Add the optional lemon juice if you like, and thin with 1–2 tablespoons water only as needed.

3. Start with about ¾ cup homemade dressing for this batch. Toss well, adding more dressing if needed. Save any unused homemade dressing separately in the refrigerator.

4. Refrigerate the dressed slaw for 15–30 minutes so the flavors can mingle. Toss again before serving. Enjoy as a dinner side or alongside tuna.

NUTRITION NOTE

Red cabbage, carrots, and onion add colorful plant foods and fiber. The homemade dressing includes olive oil and plain Greek yogurt for a creamy dressing with some added protein—a simple fit for a varied, plant-forward eating pattern.
